Savory Simple Dinner Recipe With Good Ranchers

We've all been there, the mid day panic when you realize that you have NOTHING planned for dinner. The kids still have to be picked up from school and you're at a loss of what to put on the table in less than three hours? 

When it comes to cooking, we're ALL about simple. This recipe is SO fresh, SO easy, and takes less than 30 minutes to make.  *Serves 6*


10 Sweet Potatoes 

Drizzle of Olive Oil 

2 Tablespoons Garlic Powder

Lori's Perfect Chicken Seasoning

Good Ranchers Chicken Box Subscription OR 8 chicken breasts 

4 Cloves of Garlic 

1 Red Onion (half for chicken half for salad)

Arugula Salad 

1 Apple 

1/2-Full bag of Arugula 

2 Dates 

Rest of onion 

Handful of Pecans

Homemade Dressing

1/2 Cup Olive Oil 

1/2 Cup Balsamic Vineagar

Splash of Maple Syrup 



To start, you will want to make sure your Good Ranchers Chicken is thawed out! If you don't know who they are yet you are seriously missing out! If you're like me, you didn't pull the meat out of the freezer ahead of time so I just like to thaw it out in warm water on the stove! 


Rinse your sweet potatoes under water and line them in a cooking dish. Coat with olive oil and garlic powder for seasoning. 

Line the chicken in an un-greased pan. 

Sprinkle a packet of Cooking with Lori's Perfect Chicken Seasoning over the chicken and massage it in. If ya'll have never used this before it is a game changer. It's the perfect combination of spices to make cooking a BREEZE and your food taste so good. 

Finely dice the garlic + onion and sprinkle over the chicken! Save half of the onion for the salad!

You can put the potatoes in the oven at 350 for 20-30 minutes!

Next, you can make this easy oil + vinegar dressing! Sometimes the simpler the better and better for your health! The secret to my dressing is I like to add a generous splash of maple syrup! I like to use a bottle to combine and distribute it but you can totally just mix the two in a bowl! I would add a pinch of salt and then shake or stir to combine! 

Now you can put your chicken in the oven and cook for 20 minutes or until cooked through! 

While your chicken and potatoes are cooking you can make your Arugula salad! This is the lovely combination of sweet and savory for a perfect side dish! 

Cut up the apples, onions, and dates into bite sized pieces! 

Sprinkle over the arugula mixture with pecans!

Add your dressing over top! 


Once the potatoes and chicken are done cooking you can pull them out and serve them once cooled!
